There are so many great non dairy milks on the market, it comes down to a matter of personal taste. For frothing for a #cappucino or #latte it's best to select one of the ones labelled #Barista which are specially formulated to produce the best foam. There is a great recipe to make at home here, which produced the look you see below and is delicious. You do need a strong blender.

I don't put an icing on the carrot cakes, we prefer it without, but there is an excellent vegan one we have used in the #recipe below. No need for eggs or dairy in your #baking.

Today cook is busy, so lunch is leftover soup with the added bonus of air fried potato wedges. I just toss them in a little tamari or soy sauce, then with onion and garlic powder, paprika and cayenne to taste. 20 mins in the fryer. This comfort food is quickly prepared and free of oil.

Nutty Miso soup
Today's #veganuary lunch (which I am about to make) is an #oilfree version of a soup I was served in a flat in Stoke-on-Trent, England, in the '70s by my #vegan brother and his wife and partridge (yes, really). I was visiting them with my small daughter and it was freezing weather, so this soup really hit the spot. The recipe, should you decide to try this delicious soup, is in my next post (I think I can make this work).

Sweet & Spicy Crispy Airfried Tofu and Cauliflower.
Today I am serving you one of my favourite meals. It has a lovely crispy texture with a spicy sweet sauce. I serve it over quinoa and water sauteed Pak Choy, sprinkled with sesame seeds. It is easy to make and well worth it even if you are cooking for 1 as when I first tried it.
