I seem to recall that #SevenWonders has a solitaire "mode" that can be played. Most cooperative games like #ForbiddenIsland and #Pandemic can also be played solo.
I've heard good things about Deep Space D6 but have yet to encounter it personally to get a feel for it.
BGG has a good post on a solo variant for #RaceForTheGalaxy.
I found a Solo Scenario book for #Gloomhaven here.
