I have just finished a new ferment, a combination I like for reasons beyond the sound of the name. This is the third batch of Beets & Leeks I've made, the last two quite similar. (I make up my own recipes, and I like this one).

To tempt or inspire you today - a dal from the Assam region in North East India that mixes both split red lentils and mung dal. It is tasty, substantial, healthy and nourishing. The recipe uses mustard oil for a wonderful tang.
Often outside of India, dal is made to be very very thick, porridge-like. In my experience, this is not the case in India.

Had a friend come over yesterday to make sausage. We made 4# of kielbasa and 6# of andouille. Smoked it all with apple chips and we're good to go. Ready for my traditional new year's hoppin' john!
