Today's bread is a Normandy-style loaf with a mix of rye, wholemeal and unbleached bread flours. It's the first time I have used rye flour in bread.

It is mixed with dry cider* and water, and has 3 rising times.

I can't wait.

*I have to drink the rest of the cider, right? Cider is the only drink that my body tolerates reasonably well. I usually don't bother, but needs be....

** I do cook with alcohol in some dishes - wine, dry vermouth, gin, some liqueurs. My body tolerates it as long as it is cooked off.
