近几个月用上了自己现磨的面粉,谈点心得:
家用的磨子磨出来的面粉不全是很细的。有一部分比较粗的颗粒,分布在面粉堆的表面特定位置。我一开始是搅匀以后用的。感觉面包内部颗粒感比较明显,甚至比原来直接用买来的面粉烤的还有不如。
最近灵光一闪,把这部分粗颗粒尽量用在喂酸酵头的那一半。粗颗粒大部分是谷粒表面深色的部位,营养和各种酶的成分应该更丰富,感觉酸酵头活力增强。而且经过长时间与水反应,筋性也更好,烤出来的面包内部的组织更细腻。
