Tried making Beaten Biscuits, an old American Southern-style biscuit dating back to the Antebellum South. These are harder than the fluffy buttermilk biscuits of today and are made by beating the dough for ~30 mins due to lack of access to leavening agents back then. Followed a recipe from Michael Twitty’s (KosherSoul) book The Cooking Gene. Fitbit thought I was doing a workout.

Working on collard greens made with bone broth & caramelized onion& garlic, baked butternut squash lightly roasted w/ olive oil, & grilled chicken breasts for lunches (& who knows—snacks? Breakfasts?) for this week & some to freeze. Cooking collard greens properly takes quite a bit of prep time, but it’s totally worth it.
