More Vegan African cookbook goodness. This is a baked casserole called bobotie. I haven't had this before so had no idea how it would taste.

There's an interesting mix of spices (cinnamon, paprika, cumin, cloves, turmeric, pepper) and some grated apple with lentils and veg. Kind of sweet and very filling. Made a lot! I served it alongside geelris, a sweet/spicy rice with raisins, turmeric, and star anise. I think the author is toning down the spice.

Years ago when I was backpacking in Africa, I loved trying all the various cuisines. I wasn't vegan then, and it's been a long time since I tasted those flavors. To my joy, my husband recently brought home a cookbook from the library, Vegan Africa by Marie Kacoucia. My first attempted recipes were chakalaka and fried corn cakes. I remember chakalaka as being REALLY spicy, so she's toned it down, but the dish was still delicious!
