A rainy afternoon off means it is time to trifle with an recipe. Today it is celeriac, fennel, and apple chowder.! I got to say hello to some uncommon kitchen vegetable visitors, celeriac and fennel and the test kitchen promised a creamy and delicious veggie chowder! It is indeed creamy and delicious!

This Roasted Butternut Squash and Apple Soup is made with caramelized squash and sautéed apples. It is wonderful as a main dish served with a salad and grainy bread, or as an opening course for a larger meal.

The soup is garnished with a swirl of Maple Crème Fraîche, then topped with pecans and red currants and finished with a dusting of nutmeg.

I decided not to buy any tinned for my work dinners* this week. I decided to make soup instead. Here is a winter vegetable soup with pearl barley that I made , recipe from the BBC Good Food website bbcgoodfood.com/user/799732/re.

I swapped out the butter for Suma vegan olive spread because my body is not happy with the amount of dairy I ate over Xmas.

*You might refer to this as 'lunch'.
