Came across raw pistachios at the local Afghan grocery store and decided to get some out of curiosity.
The skins/flesh tastes like green mango to me, really tart. I made a chutney out of them. Turned out well, had a nice balance of spice, sweetness and tartness.
The pistachio nuts in this stage has a taste and texture that is similar to broad beans. I sautéed them with some prawns, onions and garlic. Kept the seasoning pretty simple. Delicious combination though, something I'll definitely have again!
