Dinner was good. The first lettuce from the garden used up some rolls to make garlic bread and hot smoked chicken thigh stuffed with hauloumi and wrapped in bacon. Seasoned well and glazed at the end.

Just me tonight and I thought I'd have a go at making brisket Ramen. I made a broth and had marinaded some shoyu eggs last night. Leftover brisket gently heated. Those enoki mushrooms were a great addition

Here is the setup, 16 Weber Briquettes fully lit, piece of Hickory wood in top, flipping every 15 minutes, pit running at 275F

Latest acquisition arrived today, been after a decent cutting board with a juice groove, The Famous BBQ Rimu Meat Board fitted that requirement, it’s big 600x450 for those large cuts. Also picked up some food safe high heat gloves, no more paper towels and burnt fingers. (reposted with alt text included)

Sometimes when you're barbecuing with charcoal or wood there's the odd minor burn. I can thoroughly not recommend barbecuong barefoot as it takes a wee while to figure out that the stinging on the soul of your foot is a small piece of charcoal searing into your foot.

This week I went one better though, and backed into the hot end of the gas firestarter, getting the back of my knee. It was so hot it stung initially and then no pain!

Should I go to the garage and get out one of the homekill "pot roasts" and give it a low and slow cook tomorrow in an attempt to make pulled beef?

I wish my new gravity fed BBQ had arrived, a bit of automation would have been good.

Pulled Lamb on the Kettle, 12 hour low and slow cook. Rubbed with the Four Saucemen The Black Rub (contains activated charcoal), great flavour, but messy to work with, recommend food safe gloves
