165° after 7 hours on the smoke at 225°, I put this brisket on at 11:30 PM last night before bed. Wrapping in foil now, in five hours this 11 pounder should be at 205° internal and perfect. I’ll let it rest about five hours before dinner tonight.
For me, this is a wonderful ingredient for a perfect weekend and Saturday.

A little backyard BBQ cooking this morning before school. Put these two 17 pound prime briskets on the smoker last night at midnight, after seven hours now (at 225° constant temperature) they 160° internal temperature and ready for the foil wrap. Tri-Tip turned our pretty perfect medium-rare. After smoking outside for an hour and a half at 225°, I brought it in for a reverse sear on cast-iron in butter, about four minutes a side. Then rested for 15 minutes before under a foil tent. Internal temperature after the rest hit 135°.

With that mustard sauce I used in this cook last weekend, they’re really NOT sweet at all, but just perfectly savory… Especially with the sautéed onions. Reheated in the skillet on the stove, they have a bit of “blackened char”on the edges that also really adds to the flavor.

Leftover night tonight with a roasted Brussel sprout bonus. Sautéed onions with leftover pulled pork, grated cheddar cheese, and Pace Picante Sauce on skillet grilled / sautéed corn tortillas.
These pork carnitas are SO good! The next time I cook barbecue for a group, I think I will serve my beef brisket along with these pork carnitas.

On weekdays, Shelly gets up at 4 AM to get ready for school. Today (Saturday morning) Moose decided to wake me up at 5 AM because it was time to go outside. I checked the pork butt on the smoker, and it was at about 155° internal temperature, so that’s close enough to the stall to wrap.

It’s the weekend, and time to smoke a pork butt! I bought this beauty, which is a bone-in 7.9 pound pork butt, for $19 at our local Harris Teeter grocery store this afternoon after school. At $2.50 a pound, this makes this a very affordable cook!
