BIG POT of Cock-a-Leekie
Chicken legs flash fried in olive oil and a knob of butter then left to simmer in a broth of sliced leeks and celery, chopped onion and carrot, crushed garlic, dried thyme, mixed chicken and vegetable stock, sea salt and plenty of ground black paper all also fried with lardons, olive oil and butter!
Should do us for the week!

This dahl will be medicinal !
split peas, carrots, turnip, onions, garlic tomato concentrate
fresh ginger, fresh curcuma, garam masala, green cardamom, black cardamom, coriander, some secret hot spices
and of course coconut milk.

- 2.5 kg de tartiflette
- 3 litres de soupe butternut
- un bourguignon vegan (champignons)
Le gâteau aux pommes est encore au four.
Mais comme on 4 cette semaine, ça tiendra max jusqu'à mardi soir :(
Batch cooking makes it easier for me and my partner. I prep & cook over 2 days, & then I've contributed to the household. Then they don't have to think about it, they just get a container out of the freezer on any given night, & just need to heat up & make pasta.

The pasta sauce all boxed up for freezing.
It ended up being 29 meals. Each container here holds enough pasta sauce for 2 people.
Because I find cooking so energy draining, my partner and I have a system when I save up some spoons and then spend a day batch cooking items such as pasta sauce, curries, stews and soups. Then he does the defrosting and cooking each evening, adding pasta, rice etc, as appropriate and serves up.
This is a shedload (c. 10 litres) of Mushroom Pasta Sauce. With all the #Garlic 😊
It includes:
30 medium-large garlic cloves
16 tins of tinned tomatoes
A mountain of thick cut mushrooms
Lashings of lightly fried pine nuts
Several handfuls of olives
A couple of bunches of freshly picked Golden Oregano
It will serve c. 30 individual meals.

6. Cook on a medium heat until the curry is nice and thick.
7. Serve the curry on top of your steaming rice. Garnish with freshly chopped coriander.
8. If batch cooking: put what curry you aren’t eating into containers and freeze. I reuse takeaway containers and put enough for two people in each one.

2. Heat a large pan. Add a splash of vegetable oil. Add your cubes of halloumi.
3. As the halloumi starts to brown, add the garlic, ginger, turmeric, chilli powder, & garam masala. Mix everything together, add your cauliflower, and then add tomato puree. Mix it in.
4. At this point, pour in your tinned tomatoes and your coconut milk. Stir everything together.
5. Get your rice on. (If batch cooking, only do enough for that day)

Today I'm batch cooking our favourite curry: Cauliflower & Halloumi Curry

2 Blocks of Halloumi
1 Cauliflower or 2 frozen bags
4 Cloves of Garlic
Knob of Ginger
1½ tsp Chilli Powder
Heaped tsp of Turmeric
2 tsp Garam Masala
1½ tsp Tomato Puree
Bunch of Coriander
400ml Coconut Milk
2 Tins of Plum Tomatoes
Basmati Rice
I usually batch cook this, the photo is x3 of everything above, c. 10 litres.
1. Chop halloumi & cauliflower into bitesize pieces.
