Cream Ale has never been a thing here in Australia AFAIK. I often hear US based brewers talk about it though. After significantly bastardising Adam Wolfe’s recipe (Beer and Brewer 47) to suit what I have to hand it’s possible I still may not know what the style is all about. Pale malt 62.5%, Vienna 19.5%, Oats 9.8%, Sheperds Delight 4.3% and Toffee Malt 3.9%. #Brewday #craftbeer #brisbane

My glycol jacket for the keg, which was supposed to arrive on Saturday, still hasn’t shown up. Since I transferred wort around 90F, I let it sit overnight in the cold brewery to finish chilling. Today, still no glycol jacket. So I just pitched a packet of S-04 anyway, and I’m hoping the cold outside temperatures keep this reasonably cool.
Final numbers:
Target 8.5L @ 12.5P/1.051
Actual 8.3L @ 12.0/1.048
Pretty damn happy! And the wort smells and tastes great, lots of berry that I hope comes through in the final beer.
45 minute boil later, added whole cone whirlpool hops, for a 30 minute stand at 60C

Small batches go so much faster. 20 minutes of letting the bag drop, and I’ll already boiling. No heat stick needed this time.
Fast mash this time! 40 minutes in I hit my gravity and pulled the bag.

Not a ton of hops, aiming for around 40 IBU. Also added mash hops.
Small batch today, because the conical is occupied with a Helles. Todays pale ale is all Mecca Grade Lamonta Pale with El Dorado hops.
Looks like a great (we’ll actuallly cold and rainy) day to brew a SMaSH pale ale!
