Hopefully the sous-vide reheat will taste as good as the original.

Even at the lowest burner setting it is currently boiling angrily. I'm assuming that's just all the moisture rapidly boiling out of the fat but I'll be keeping a close eye on it this morning.

Forgot to post yesterday’s cook here! I found a 20 pound brisket at Costco and that was literally the smallest one I could find for the money anywhere.
So I got that for my chili that I will make later today, but damn if this wasn’t the best brisket I’ve ever made.
14 hours on the smoker 1.5 resting and the slices were just great and it rendered a ton of jus.
Now on to the chili!
