It ain’t always fun and a lot of the time, it’s far from it. We’re not saving lives, but we are trying to make them better lived and that’s where people are picky and particular (if you’re on the edge of death, your choices don’t get much more limited than “live or die?”, but as we all know, there is a countless number of ways to cook an egg and each way is so personal, so sacred that yolks “jUsT sO” or “whites only because my cholesterol count” is so life or death somehow).

Equally vindicating and nerve-racking to have your parents visit your place of work and see what it’s actually all about, see how much you actually do. I didn’t become the Asian-coveted “DLE” as I like to call them (Doctor/Lawyer/Engineer) so to have to continually justify a profession that is as removed from those three as it is and is arguably made-up or “for fun!” (not quite as bad as “influencer” or “podcaster”, or worse, “actor”—) is a painful eternal exercise.

I’ve never been able to stick around for the initial reactions to my creations upon their release into the bistro & cafĂ©. It seems I’m finalizing details on my last day of my work week and then just relying on the team to execute things while I begin my days off—

So I don’t know how the egg showpiece is doing. I didn’t know how the Ă©clair was doing. I didn’t know how my Belle HĂ©lĂšne was doing. I didn’t know how my ForĂȘt Noir macaron was doing.
