Lunch from New York Deli, in #Denver, today was a chicken salad sandwich. Fred likes to add bacon to his, apparently. My thing is adding lettuce and cheddar cheese. And I must say, this is the best $15 chicken salad sandwich I have had in a very long time. The sandwich came with a pickle, a small container of coleslaw, and a small container of potato salad. I spent $17 on all of that, but that is in line with fancy New York pricing. So, I can deal. Lots of bread choices, sandwich options, and sandwich add-ons. Highly recommend this place for lunch. #Colorado

As a Puerto Rican, I benefited from an equal opportunity program which helped New Jersey state minority residents go to college. My parents grew up poor with no generational wealth, unlike other white families I would meet later in life. I learned about affirmative action when taking my intro to HR course, and I smiled, because while afirmative action policies don't solve the problem of bridging the gap for college bound minorities entirely, I saw personally how these programs could benefit gen z-ers who were in the same place I was when I turned 18 financially and educationally. There have been recent policy changes that have saddened me, but as a Latina, none saddens me more than watching affirmative action being overturned as I progress further into my thirties. As a #Colorado resident, I feel privileged to live in a blue state. But I am concerned about the yet unseen consequences of this decision on my black and brown friends and allies as well as potentially myself.
