Regarding the cold noodles. If you can't get soba noodles. Any similarly sized (spaghetti) noodles will do. Just boil them until aldente, and then rinse them in cold water, then in the ice bath. (I find vermicelli type noodles a little thin - they clump up in the sauce)
For accompanying veggies, anything will work. Just make sure they're cut thin so they wrap around the noodles. Carrots, celery, green or red pepper strips, courgettes, blanched broccoli, cauliflower, beans, asparagus #cooking
Did that coffee liquor brown sugar honey mix I usually do to make a sort of taffy, but I added in some caramel maccchiato creamer and vanilla extract and Oh my god! it's amazing! turned out making a hard candy instead of a taffy tho will need to learn more how to adjust texture #cooking #candymaking #candy
Aubergine Caponata.
First time making this as some aubergines were going cheap at the market. Sadly, I didn't have any salty capers to add but improvised with a few tiny dried anchovies blitzed with the tomatoes & dash of white wine for passata. The recipe also called for raisins but I left these out completely. Anyone else heard of raisins in an Aubergine Caponata?
The picture is atrocious and really doesn't pick up the red of the tomatoes but this is yummy if I do say so myself. Serving with homemade panini bread and olive oil.

Wow! For a first attempt at cashew “mozzarella” this didn’t turn out half bad!
It slices okay with a serrated knife, is almost free of taste (so I’ll have to work with that next time), it’s stretchy almost like freshly-made mozzarella, and it MELTS a bit when you reheat it.

Again, attempting to make jellies for the first time hence the small batches. Unless I change my mind about making the blueberry, lemon and basil jelly, this tiny batch of hot red pepper jelly is the last variety for the Christmas give aways.
Note to self so I remember how I made this marinade/dressing-
2 Tbsp Pomegranate Molasses
1 Tbsp Balsamic Vinegar
1 Tbsp Xaoxing Rice Wine
1 tsp Dried Tarragon
1 tsp Garlic paste
1/2 tsp Sumac
Fresh Cracked Pepper- to taste
Sea Salt- to taste
1-2 Tbsp Olive Oil
Whisked together, olive oil added, then whisked again.
Currently being used as a marinade for chicken thighs to be roasted with brussel sprouts & carrots for dinner tonight.

Hilarious article in the New Yorker about kitchen gadgets. We actually USE our electric pressure cooker, ice-cream maker (Lello Mousso is a wonderful machine!), bread maker (Zojirushi) a LOT! We no longer buy bread or ice-cream. It's been wonderful. I use the pressure cooker for Indian cooking mostly.
I love it when I have something cooking away for hours in the oven, and the smell slowly seeps through my flat.
