EASTER braised shank with a sauce made with white wine, shallots, carrots, celery, raisins, honey, and apricot jelly. It’s next puréed, adding grated Parmigiano Reggiano, a whole egg, and a knob of butter. It’s processed until smooth and emulsified. The pasta is cooked, then folding in the crema, wetting with a bit of the pasta water, and then folding in the peas.

Mamma made “BruttiMaBuoni” , which is a type of or -flavoured biscuit made in Prato, Central Italy, and many other cities. The name means “ugly but good”, as well as that it can have other innuendo in the Italian vernacular.
