Tonight's dinner: quick and simple "quesadilla" It's not authentic in any way shape or form, but its a cheap simple, tasty dinner. Shred a roast chook, chop some cabbage, carrot and coriander mix in a bowl with some shredded cheese. Cook in a sandwich press between two tortilla. Pork abobo and pulled pork toppings along with esquites, frijoles, guacamole, mojo dressing, "queso fresco" (actually compressed feta but not too far off), two types of salsa rojo (one tomatillo based, one tomato), some pickled jalapenos and a little sandwich pickle.
