Getting ready to go to work. The weirdest thing about doing nightshifts is how porridge somehow became an evening food for me, and chicken wings became a morning food, but they still remained a breakfast and supper food, respectively.

One surprising food science thing I learned is how to store celery. All my life, I have stored celery in the plastic bag in which it comes from the store. It would become limp in a few days. It turns out celery should not be stored in plastic. Celery produces ethylene, a hormone that cause ripening. Plastic keeps the ethylene from escaping, which causes the celery to spoil. Celery should instead be kept in aluminum foil. Ethylene can escape from foil. Result: crisp celery!
