An early/on-time for once:

1. Walked the dogs just as far but this time without needing to do more than rinse their paws afterwards. 🐾
2. Cooked a veggie roast dinner for the family. Being , and it’s a tricky proposition made more complex by Child 1 needing to be . 🥦
3. All the dishwashing done and away within a couple of hours. 🍽️

Chilling now by rewatching . Rewatching it I’m surprised how some of what the issues it tackles seem more relevant now than ever.

Big family dinner at Original Joes. Kids got a few different meals and sides, spoke to the waiter specifically about Celiac, and ordered the simplest meals. Results:

Grilled Salmon: FAIL
Grilled NY Steak: FAIL
Mashed Potatoes: FAIL
Chicken Picatta: FAIL

(I was pretty sure about that last one, but we were desperate to feed the kids)

Tinga de Pollo tacos!!! (which looked a LOT nicer before they got carried home in a bag)

The negative status of meat is mostly due to the number of fried and deep fried dishes. Frying meat isn't necessary for a tasty and easy to prepare meal. Most hamburger or turkey burger dishes listed are baked. Chili and spaghetti are the exception. The occasional stir fry can add missing vitamins and minerals in a small meal.

In most cases, beef burger and turkey burger are interchangeable. Pork burger is not, simply because extra spices are usually added to it, therefore forming more of a sausage than a burger.

Grass, range fed meat is healthiest, and can be bought in large lots and frozen in an extra freezer for up to a year, ready when you want it.

Many people think living and means they can no longer enjoy desserts. This is not true. These days, there are many delicious dessert mixes, and create your own flour mixes to create the perfect desert.

Some cooks choose to buy and mix flours on their own. This requires a lot of chemistry cooking knowledge. There are many websites, and cookbooks with step by step instructions. If you have the time, money, and energy you can learn about the unusual flours used in place of wheat, and make your own mixes.

People with low dexterity often feel like they must buy pre made desserts rather than make their own, or wait on someone to mix and cook it for them. This isn't necessary, either. While some people like to use all kinds of mixers and other electrical tools, many with dexterity problems recognize the additional energy, and time, needed to clean those tools. However, there are ways to make most desserts healthy and accessible, even to those with limited dexterity.

Many people with low vision, or newly blind, feel overwhelmed at the thought of making a dessert. They may be afraid of cutting themselves with a knife, and hurting themselves, or someone else with a tool. And what happens if a mixer blade falls into the cake mix and no one notices until they take a bite? Again, these issues can be overcome. Baking doesn't have to be ultra messy, or dangerous.

Grain.

It quickly becomes a dirty cuss word to the gluten intolerant. Many well meaning people think that if a package is not clearly labeled wheat it is safe. For instance, a neighbor asked me to make her a white bread sandwich, ten seconds after being told I am so gluten intolerant that I cannot walk down the bread aisle.

Part of this is simple education. She didn't comprehend what was said. Educating others isn't an easy task, and not something that has to be done every time a miscomprehension is encountered.

Is any grain truly safe for the gluten intolerant?

Yes and no.

Some people are far more sensitive to grains in general, and there are far fewer grains they can safely eat.

Also:

Where was the grain stored before being shipped?

How was it shipped?

How as it stored in the factory that prepared it into food?

Were these places gluten free?

Did the grain silo, grain truck, or storage bin contain wheat only a short time before?

Was it thoroughly washed before the gluten free grain was added?

Most of the time, no one knows. The person asked will stare past the asker as if they don't exist.

For many living gluten free, it may be best to avoid grain, unless personally grown, ground, and cooked.

This isn't financially, or physically feasible, for most people.​

For best results, keep grain intake to a minimum to avoid unexpected contaminants that even a dedicated gluten free facility may not be able to avoid. This includes cross contamination on a store shelf.
