I made brownies, riffing off two different recipes to make something that aligned with what was in the pantry. Ends of chocolate chip bags, limited eggs, etc.
Got a little foggy, went "huh that batter seems a little shallow in the pan," put it in the oven, THEN realized I'd forgotten a cup of almond flour.
I guess it'll be extra fudgy ...
Today in #GlutenFreeBaking, hamburger buns!
As most of my baking has been recently, these are made with King Arthur's Gluten Free Bread Flour. It's made with gluten free wheat starch and some kind of elemental food science magic. I have been thrilled with this flour and started making homemade bread again after a 15 year absence.
Today was hamburger buns! These got an overnight rise (because fatigue, that rascal) after they were shaped and came out quite nicely.

Almond Shortbread #Recipe
115g (1 stick) butter
115g brown sugar
230g almond flour
15g sweet rice flour
1 tsp lemon juice
1/8 tsp lemon zest (optional)
1/8 tsp ground cardamom
1/8 tsp salt (1/4 tsp if using unsalted butter)
Cream butter and sugar together until smooth. Add flours, juice, zest, spice and salt. Mix until well combined into one solid ball. Spread into pan and bake at 350F for 20 minutes.
Makes one 9" crust with a little extra.

Today in #GlutenFreeBaking - it's my roommate's birthday! That means CAKE.
Her choice is a vanilla bean cheesecake. Instead of a graham cracker crust, I start with a base that's a combination between pate sucrée and almond shortbread. It has a tender crumb and hints of cardamom and lemon.
After that is the filling. My recipe uses NYC style ingredients but Japanese souffle-style cheesecake techniques. The result is a rich but airy - not dense - cheesecake.
I finally got my hands on some of the King Arthur #GlutenFree Bread Flour! I'm so excited, I've missed bread baking terribly.
It's made from CODEX wheat starch, which is produced by washing the starch away from the gluten. I've been having great success (both baking and health wise) with KA's GF pizza flour, so I'm optimistic that I'll get the same excellent results from the bread flour.

Made focaccia tonight with the King Arthur gluten free pizza flour. I've been baking for 35 years, 15 of those gluten free, and this stuff is the best.
It's still clearly gluten free baking, but it's got that wheat flavor and texture. I think my next batch from this will incorporate some whole grains to see if I can get a nice multigrain roll (teff and millet, maybe some sorghum)

Trying a new-to-me recipe for pizza from King Arthur using their Gluten-Free '00' Pizza Flour, which is a blend of wheat starch, cornstarch, sorghum, and a couple of dough additives.
I like the flour, it handles well and has a nice flavor. I'm not so sure about the recipe; it reads to me like a traditional baker wrote it without a good understanding of GF baking. 100% hydration is too much. We'll see once the rise is finished.

Ahern's recipe calls for 60% starches and 40% high protein/whole grains to make a #GlutenFree flour blend.
Makes 1kg / 2.2lbs
600g total high starch flours
200g tapioca flour
200g sweet rice flour
200g potato starch
400g total whole grains / nut / legume
100g brown rice flour
100g sorghum flour
50g teff
150g almond flour
Shake to combine, enough for 3-5 recipes

Making my #GlutenFree flour blend, which occurs every month or so. At the rate I bake, I find it cheaper to buy flours piecemeal and make my own blends. The flavor is also better.
American grocery store chains overcharge for most of these flours, so I buy a lot of flours and starches from East Asian markets. When I do buy from the grocery it's almost always Bob's Red Mill.

The nicest stress cake I ever did bake- orange layer cake (6” and 4”) with an almond pastry cream filling, topped with cardamom buttercream and orange zest. I should bad news more often, it’s incredible.
