Here's a quick pantry clean-out style curry for a weeknight meal.
The curry is fragrant and spicy with a not-to-hot kick complemented by the fresh sour raita (yogurt sauce).
Topped with flavor packed crunchy potatoes, this was a kid favorite! Oh, and did I mention #Vegetarian ?

This was a perfect pantry clean out and still had all the depth of flavor even with a few clever hacks. Canned broth, canned chicken, and a chicken broth powder to boost the umami flavor.

Two lbs carrots, cut faux tourne.
2T corn starch
2C chicken/vegetable stock
2T sugar
2T butter
Toss carrots in corn starch. In a tall saucé pan, combine all Ingredients. Bring to a boil covered. Reduce heat. Cook uncovered until carrots are pierced easily and sauce is tacky.
