I started cooking frequently with unpolished millet, especially kodo, barnyard, and foxtail millets, after watching the video below. "Unpolished" because I follow a whole-food diet and thus look for intact whole grain (e.g., hulled barley rather than pearled barley, brown rice rather than white rice).

You're welcome. I do the same sort of batch cooking with beans and lentils: cook a good-sized batch, drain, refrigerate, and use in various dishes (stir-fries, soups, salads, chilis, curries, etc.).

And I often combine beans/lentils and (intact whole) grain in tempeh:

I share your love of barley, and just yesterday bought about 500g of barley. I follow a whole-food plant-based diet, so I much prefer intact whole grain, so I got hulled barley, which does take a while to cook.

So I cook up a big batch and then refrigerate it, taking out as much as I need for a stir-fry or soup or salad or whatever.

Refrigerating the grain makes the starch resistant and not so quickly digested.

That sounds really good. I would have probably also added some chopped kale, just to have some greens. And I think instead of potatoes, I would have bone with a grain — a good unpolished millet (like kodo millet or barnyard millet) or perhaps just some old-fashioned rolled oats. But that's because I like grain with legumes. Certainly what you did sounds (and looks) very tasty.

The biscuits look wonderful.

I include beans/lentils and also a minimally processed whole grain in meals. Eg, I make tempeh with a 50-50 mix of beans/lentils and intact whole grain.

I use tempeh in stir-fries, stews, chilis, & curries. Or I use tofu, which takes care of beans, but how about the grain? I often have cooked intact whole grain on hand, but not always.
