"Sencha" from UNYTEA Store. Larger pieces of leaf and cleaner sort than the Harney & Sons Sencha I have been drinking. They describe this Sencha as mellow and easy brewing, qualities I appreciate in any tea, and can confirm on both counts.

70 C (158 F) for Harney and Sons Sencha Scent of Mountains. Gonna have to try a few times but I'm not sure the lower temp benefits this particular sencha. My first impression is the expression of the tea was better at 165 F.

The Genmai Cha green .

Well.😅 Usually the whole point of drinking teas like a boss is to take what’s derived from Camellia sinensis and feel the rich taste without any extra aromatization. However, this doesn’t work for Japanese teas as far as I can see. Here is the mixed with… roasted rice. Altogether brewed, it feels like a popcorn.🤪

For me, it’s a tea attraction, something like Lapsang Souchong.

The Gyokuro “jade dew” green .

There is a thing about green teas that almost no tea is green once brewed. It’s usually yellow. On the other hand, there is yellow tea, which was once the drink of the emperor and one's circle. As you see, I don’t have a clear picture of tea coloring and naming.🙂

Nevertheless, Gyokuro’s drink color is indeed green. I don’t remember its taste clearly, but it was good enough to purchase more.

The Kukicha Japanese green . It has a stable aroma and taste lasting multiple brews. I can’t say that I was amazed by the qualities mentioned, but it is a good tea with an interesting look, which is the result of mixing leaves with young twigs.

Unfortunately, the whole-plate view picture occurred to be a low-quality one, so it’s only close look now.

Brewed Sencha Scent of Mountains again at 175 F for today's tea. Was gonna go cooler than last time, but didn't check notes first, and brewed again at same temp. Oops. Next time, 170 F.

More experimentation with lower brewing temps, down to 175F for this Sencha (Scent of Mountains, Harney & Sons). Much more complex flavor expression from the tea. Plus, you don't have to wait so long not to burn your tongue.

Fine, I will brew Japanese tea in my Kyusu. NaturaliYea #09 Superior Hojicha from Yunomi (via Liquid Proust). Recommended brew temps for Hojicha are pretty low, some sites say 80C/175F to "avoid bitterness". I went with 180, 'cos I'm a bitter guy (really just shooting in the dark, I know next to nothing about Japanese tea).

Busy morning of cleaning the kitchen, getting some other chores done, staying on top of my physio exercises (feeling motivated today!) and enjoying a cup of tea (gyokuro karigane (kukicha)) before facing the big snow outside as I walk the 3 km to my ballet studio for class.

L’heure du thé!

Ce matin, je continue sur le thème du sencha. Voici un thé bio récolté en mai de cette année de la région Miyazaki (sud du Japon), du cultivar Asatsuyu. Le thé est à la fois chaleureux et floral, très réconfortant pour le premier matin gelé de novembre.

J’ai préparé ma première tasse avec une eau pas très chaude (environ 70 degrés C), pour obtenir un résultat plus naturellement sucré. Je vais probablement augmenter la température de 5 ou 10 degrés pour les 2e et 3e infusions!

L'heure du thé!

Journée grise grise grise — j'ai besoin de quelque chose de très réconfortant, et j'ai choisi ce hojicha récolté ce printemps à Gokase. Hojicha est un thé torréfié — celui-ci utilise à sa base du kukicha de très bonne qualité, presque sucré.

Commencer ma journée avec la parfaite tasse de thé est un exercise très important :blobcatcoffee: :pink_cup_of_tea:
