I roasted a turkey, post-Thanksgiving, specifically to provide us with a good supply of leftovers, so I needed to bake some good crusty sourdough bread for turkey sandwiches.
This is white/wholegrain Kamut/wholegrain rye, at 77% hydration.

The whole kamut bread was cooled enough to taste it.
Nice.
More flavour than whole wheat. Next time I must add a bit of extra water (if there is going to be a next time).
It is a pity the flour is darn expensive, about four times as expensive as wheat.
Is it better?
Yes.
Is it four times as good?
Nope.

I am currently baking a bread from whole Kamut flour (https://en.wikipedia.org/wiki/Khorasan_wheat). This is my first time ever. I only recently found out about kamut.
