I made Tempeh Bacon Brussel Sprout Casserole again (see recipe link below) the only diff instead of zucchini I used carrots with the brussel sprouts. Everything else is the same.

It's really just a toss together kinda meal. I combined 2 diff #Daring brand mock chicken flavors together (teriyaki & regular) & made some Brown Butter Sage #RightRrice & combined them to make the main dish. I think the Teriyaki flavor is too sweet & the plain is too plain. I had an idea to mix them together & it was perfect. I cooked sugar snap peas in onion powder, garlic, Himalayan salt & a tiny bit of oil for the side dish.

Sweet potato/avocado #sushi
*I airfried the sweet potatoes first, I love a good crunch.
Instructions for the sweet potato fries: Peal & slice 1 medium sweat potato into fry-sized pieces, coat them with 1/2 tsp Himalayan salt, 1 tsp each of onion & garlic powder, 1/2 tbsp avocado oil (or oil of your choice), then place in the basket & airfry for about 10 to 15 minutes or until crispy but tender & set aside to cool.

I made quiche again. This time I used impossible burger, pesto sauce, corn, peas & green onion. I had a little extra that wouldn't fit in the pie shell so I lined a meatloaf pan with parchment & baked it alongside.

Tahini Veggies (I also did mustard tofu)
Veggies:
*2 1/2 large carrot,
*2 medium butter potatoes,
*1 medium red potato,
*2 baby sweet potatoes,
*6 Oz Chinese cabbage,
* 3/4 a large white onion,
Marinade:
*4 tbsp tahini,
*3 tbsp sesame seed,
*1/4 cup fresh chopped basil and cilantro,
*1 tsp dried marjoram,
*1 tbsp chopped garlic,
*1 tsp onion powder,
*1 tsp Italian seasoning,
*1 tsp thyme,
*1 tbsp nooch,
*3 tbsp Bragg's Liquid Amino acids,
*4 tbsp vegan Worcestershire sauce,
*1/2 cup filtered water,
Directions:
*Mix your marinade ingredients in a big bowl,
*Taste to check for needed extra seasonings,
*Chop veggies & throw into the mixture & marinate for an hr,
*Put a tbsp of oil in a baking dish with a lid or cover with foil to keep the moisture in & bake until tender but firm
For the TOFU MARINADE
Combine equal parts soy & mustard & maranade for a few hrs then bake or fry it.

I know I've mentioned my home cooking of garbanzo beans and navy beans lately for the freezer. Here's one thing I did with the garbanzo beans๐๐๐คค It was very tasty!

INGREDIENTS:
*3 cups home cooked garbanzo beans, or 2 15oz cans rinsed and drained,
*1 tbsp Hemp seed,
*1/2 cup chopped cucumber,
*1/2 cup chopped onion (I like purple or green onion. I used green this time),
*1/4 cup chopped black olives,
*1/4 cup chopped kalamata olives,
*1/4 cup chopped celery,
*1/4 cup vegan parmesan cheese,
*1/2 cup olive oil,
*4 tbsp balsamic vinegar,
*1/4 tsp dried parsley,
*1/4 tsp onion powder,
*1/2 tbsp fresh chopped basil leaves,
*1/4 tsp dried oregano,
*Salt to taste,
DIRECTIONS:
Pre-cook your garbanzo beans & cool or rinse & drain your canned ones & simply add everything together & chill for a few hours for all the flavors to incorporate ๐๐ #easypeezy
Chef's note: this is really good with chopped red, yellow or orange bell pepper.

I made #homemade #RicePaperRolls ๐๐it's a #KatsOriginalRecipe so I got to name em' "The Cordova Roll"
INGREDIENTS: rice paper, Nori, shredded carrots, shredded cucumber, thinly sliced avocado & a piece of marinated/air fried tofu.
INSTRUCTIONS: Get a pan of medium hot water, hold two edges of the rice paper & dip into the water (careful not to burn yourself) until it's soft then lay it out on a plate & flatten it, wet your slice of Nori, lay it on top, add your veggies & add your tofu, now it's time to roll (try to get everything put together before the rice paper loses its malleability) to roll it pull the side closest to you up & over the stuffins, then fold over both ends & then finish rolling until closed.
Don't feel bad if you have a few failed rice paper attempts at 1st. It's tricky & takes practice ๐
