I am once again EMBARRASSED how long it took me to listen to and, after buying bunches of fresh , trim the stems and put them in a jar of water in the fridge. They stay fresh 3x longer, easily.

Even if perhaps obvious, it's worth remembering, reminding that spices and aromatics are highly oil soluble and a great amount of flavor can be delivered through a bit of infused oil.

Here's how - a long cooked stew is served up - with a final ladel of spiced oil. The craft and skill of the famed spots often owes much to that final flavoring.

Chicken or duck doesn't matter - just steam them and then dunk into really cold water. Crack them, let them go back into the water that'll seep into the shell membrane and peeling won't be an issue

Hard to tell if this is well known or not (used to think it was...)

If your ware is well seasoned it will have layer(s) of polymerized oil/seasoning on it, so a touch of dishsoap is perfectly fine. Just don't use any sharp abrasive that will score the seasoned surface. This stainless steel chain link scrubber is great - hard but not sharp and cleans out the pan.
A touch of oil (I use walnut) and warming the pan after washing to dry keeps it ready to go.
