A sign we are getting to the end of the maple run. The syrup in these jars are from the same trees boiled to the same temperature (7.5 degrees over boiling point. For our elevation 218.5). The dark syrup on the right was made yesterday. The light syrup on the left was about 3 weeks ago. I love the deeper flavor of the dark syrup. If you look closely you can see a sap jug on the massive maple, that also holds our clothes line, in the background. #maple #MapleSyrup #foraging #canning #tappingtrees

Two of the sap jugs we’re full to overflowing this morning. By the end of the day I had more that 5 gallons of sugar maple sap. Luckily our local grocery store bakery department had two 5 gallon buckets with lids available to take. #MapleSyrup #foraging

Got in the tree taps yesterday. Perfect week to try collecting sap for syrup. It takes 2 1/2 gallons of sap to get 1 cup of syrup. So it’s really just for fun. We have very large sugar maples in which I have 4 taps in 3 trees. Also, experimenting on a birch, and on our neighbor’s black walnut. Might get a couple of tablespoons from those trees. 😂 #foraging #maplesyrup #Trees

I set my taps yesterday for maple sugaring.
Its been a weird winter: a very warm January, followed by a deep freeze that bounced from -10°F/-23C to 60F/15C in a few days. So I’m curious to see what we get; last year 24 gallons of sap yielded about a quart of syrup.
Of course that would be higher if we had sugar maples; I make do with the Norway maples (aka trash maples) introduced across suburban #Boston.
