Tofu?

Marinade cubed tofu in 1 table spoon each of sriracha sauce, light soy sauce, olive oil and cornflower (cornstarch as you know it) and then air fry for 15 minutes, shaking every 5. Then add to the top of stir fried veg.

You could always simply fry the tofu too.

Super tasty and crunchy!
