A non-profit is useful/necessary if most of the value the project builds is not captured by copyright and related rights. For example journals are in the business of selling prestige, so their value is the trademark. The trademark can't easily be neutralised https://freedomdefined.org/Elements_of_journal_freedom so it needs to be owned by a non-profit. Same for relationships and user data which can't easily be replaced.
