Timothy Pachirat's book "Every Twelve Seconds" is an excellent description of the production process in a US slaughterhouse that comes with an interesting gloss on the politics of visibility/transparency. The lack of curiosity about worker organizing is perplexing as is the lack of questioning of such basic and highly ideological categories as "clean" "dirty" "horror" and the most interesting of all in that context "kill."
