Perhaps something like the Jeppesen Three-Ring Trifold IFR but not sure whether that one can hold an iPad Mini on the side? Will be flying with paper charts most of the time, iPad would only be as a backup and for briefings on the ground.

I fly airplanes just for fun. I learned to fly in #PaloAlto, California . Typically, its just a mission to fly with a friend to a greasy spoon diner.
I have my instrument rating, to fly in low visibility, and high performance, to fly airplanes > 200 HP.
