Nach langer Zeit war ich mal wieder in der Neustadt einkaufen.
Von meinem Geburtstag hatte ich noch einen Einkaufsgutschein von "denn's und besuchte die Filiale in der Alaunstraße.
Nahm einen "Veganen Döner" mit - schmeckt mir :)
Abstecher zu "Bücher's Best" und in den Unverpackt-Laden "Lose".
Dann noch bei "Seidel's Mühlenbäckerei" (#SlowFood) ein Brot und zwei Stück Kuchen mitgenommen (für mich, klar ;)
@tazgetroete ja schade, dass da nicht genauer nachgefragt wurde, warum Putin denn dieses mal ein vertrauenswürdiger Verhandlungspartner wäre im Hinblick auf genau dieses Thema.

Making homemade ricotta is easy. I recommend watching a video. But you basically bring, say, 2 L of whole milk up to 185° F, then take it off the heat, add about 100 ml of white vinegar & some salt, gently stir & let sit for 5 minutes, then strain with cheesecloth for a couple minutes.

Hier: wurde am vorletzten Tag des Jahres nochmal gut gespeist: zuerst eine traditionelle Tiroler Gerstensuppe zu der die kalten Kiachl von vorgestern gegessen wurden. Old-school Bolognese sauce. Simmered 8 hours. Pork, beef, milk, vermouth, and on it goes.
However, it freezes great. I also freeze fresh pasta in 120gram portions for meals so if I wanna have some, I can make any kind I like with ease. I usually make about a kilo of pasta and freeze 8-9 portions. Life hacks, baby.
So the Bolognese, I heated that up then added some pasta water and a bit of butter before I added the pasta for the last minute of cooking.

Today the weather went from nearly 15° to just over 1° C (that is from 59° to 34° F, with a brief visit at 32°) in under 8 hours. Everyone is sick — headaches, sinus infections, and viruses running rampant — lots of tutoring cancellations. I’m using my 1950s pressure cooker to start ham and black bean #soup. Soup and a sandwich — except the sandwich is homemade pizza.
In Sicily, this was a Caprese or Vittoria pizza with just tomatoes and salt, olive oil, and mozzarella. I made sourdough crust.
The soup on the side has featured in a couple meals this week. Once with dumplings, twice with biscuits. There’s one bowl remaining for lunch tomorrow. It was a clean-out-the-fridge-and-add-beans kinda soup. #pizza #homecooking #baking #recipe #italian #food #slowfood #eating

I baked some biscuits since I did such a bad-ass hike today. A girl needs carbs with soup!
#BakingTip: Never twist when cutting biscuits — cut straight down & out; Square biscuits are easier to do well.
Never touch the sides or they flop over because you seal the layers.
Baking them on a pizza stone creates incredible caramelized crust.
I added cheese, but don’t add too much or it seals the sides/flops over or prevents max height.

Last night’s soup got reinvented with sourdough dumplings instead of biscuits.
The trouble people have with dumplings is they’re flat or heavy. If you take the lid off for even a second, you wreck dumplings — 15-17 mins on a simmer is how long you gotta go without looking.
For sourdough, add 2-4 TBSP of starter to flour & rub in till it’s like peas throughout, then add liquids, let sit 10 min, then add to soup, cover & steam. #dinner #food #cookingtips #slowfood
