You may be wondering,
What is ?

It’s a style of French cooking where the food is vacuum sealed (in a bag with seasoning, oils or butter, herbs etc) & immersed in water at a CONSTANT temperature and SLOW cooked over an extended time.
The slower longer time gives the seasoning time to INFUSE into the food, sealing + keeping juices inside the food. Food tends to be more juicy, not dry, flavorful. Because the water is constant, it’s not over cooked.

Collard Greens -
I added more seasoning, bacon, butter, olive oil, chicken stock etc.

staging.recipes.anovaculinary.

183degF, sousvide timer: 6 hours. Refrigerate after cooling.
Better next day. I added a lil Liquid Smoke too.
Can prep bags, freeze or cook a few hours later.

The last time, these turned out great. Lots of flavor.
