Made patatas bravas recently and no matter how long I waited (and it was WAY longer than the recipe said) I couldn't get the potatoes to brown since the oil would not get hot. Ended up scooping them out of the oil and finishing in the oven since I was DONE with frying.

I'm wondering if a boil in water/baking soda + roughed up + olive oil + high heat roast would give me authentic-ish results, faster, easier, and without a lot of oil to throw out.
