Yesterday marks the first time I completed an Ace Combat game with Ace Combat 7: Skies Unknown and I have to say, I really enjoyed it. While I was playing it rather casually and I will definitely be playing more of it. There's so many missions and so many customization options that you will likely burn out on the game before you run out of ways to play each mission.
