Recently moved to the east coast but kept my central time-based job (bless them for letting me go full remote).

Being able to start my work day later and end it later without being disjointed from NTs who start at normal times has been super helpful in my mood and productivity. ? Lol

I gave in and ordered one of those timed chastity belts for phones you can get from Amazon. I’m hoping I can use it like a Ulysses Pact for focus periods.

I’ll probably let you know in a few weeks when it arrives, how it goes.

I find it really useful as a person with to read a book with an audiobook as a companion, sometimes I'll just listen, sometimes I'll read and listen along, it's definitely helpful for focus.

Maybe my thread helps someone for inspiration.

I find batch cooking, particularly healthy food can be really helpful for reducing stress, promoting good food habits, good for executive function & gaining time back from cooking during the week.

I think it's quite step by step logical in case ppl reading it on a foggier executive function day.

So. Big healthy salad that will last much of the week often, in the fridge, with a good lid to your bowl.

Use it as a base to other meals and accompaniment or as a super quick meal by itself - it has everything you need and it is really chunky and filling.

3 different shots from different versions.

Including with super crispy no-oil spicy coated potatoes that I'll describe another day

So if you've found your Tofu brand it's super easy to cube.

Obviously you don't have to use tofu - but here is the good bit. The salad juices, will be absorbed by the tofu. It's self marinating and very tasty e.g. rather than cucumber & tomato losing juice to bowl, it transfers in to the Tofu. Is a cool tip.

So chop it up for the bowl.

✅ Silk tofu is only for blending into a paste/sauce.
❌ Firm tofu that isn't firm is wrong brand.
❌ Tofu needing pressing & faffing is wrong brand tbh.
✅ Chop open the packet, give it one shake over the sink and it's already firm, tasty (mild taste), ready to eat - this is the brand you're looking for.

Tofu is just beans. Call it not-chicken if it helps you process the concept!

If you don't like it you've bought 1 of the many disappointing Tofu's. That's all. It takes on flavours like chicken, but doesn't require cooking to not poison you and keeps better.

Batch cook larger portions really is mostly as fast as 1 small cooking when you consider clean up grabbing ingredients everything. Small cooking which you would then have to repeat a bunch of times through the week.

Batch is a cool habit to cultivate if u can, gives you time back. We all need more time right?

Cucumbers are nice crunch like peppers and more low Kcal to add volume to a batch salad.

So many ways to go but here's a good mix of:
beans
lentils
spices
herbs
acid lemonjuice or a vinegar like applecider which is milder
Soy sauce or tamari I like as well it's a healthy savoury

sometimes I add sweetcorn too

stir it all up so it's mixed properly, don't wait until the bowl is too full.

Yeah lemons are awful in UK.
If I was in spain, france or even germany I would use fresh lemons again in a flash. Juicy and keep. So that maybe was quite UK centric.

Also there's a reality for people, & etc we're just not as good at scheduling our ingredients. It's a part of our thing. We have to make compromises.

Right now we're both using electricity & computer tech. Neither of those are environmentally perfect - but life has to be pragmatic and liveable also.

I'm not a TV chef who can pluck fresh lemons from a tree in my garden. Lemons in the UK are dreadful esp since Brexit. Typically hard, juiceless, turn to rocks in the fridge or go bad really fast if left out. Also ADHD comes with it's own ingredients realities which will understand.

I buy a bottle of already squeezed spanish lemon juice (where lemons are great). It keeps better longer and saves you time.

I make big batch salads at weekends etc. You save much cooking time by doing a batch. Plus it makes the easiest thing in your fridge healthy -how cool is that?

Variety is endless, but here's ideas.

Base:
✅ soy sauce or tamari
✅ garlic (frozen or fresh pressed)
✅ some frozen chopped herbs (coriander here)
✅ chilli flakes
✅ Tumeric and fresh ground black pepper (that particular 2combo is potent anticarcinogen in med studies)

Tried Pomodoro timer practise? Times can vary but

Like 25mins to a timer then break for a few like 5mins to let your mind wander then repeat.
