Another baking 'toot':
Ended up with too much filling for the Eccles cakes I made last week, so I put the remainder in the refrigerator. Here's what I did with it.
Mixed it with six peeled, cored and sliced apples, 1 1/2 Tbsp tapioca flour and 1 Tbsp wheat flour as the filling for this apple pie.
The Eccles cake filling has the flavour profile of mincemeat, so this is in essence an apple mincemeat pie. And it's good!
