These 2 loaves are made with apple yeast water mentioned in previous toot. It’s a messy sticky dough and though I use tons of flour while folding it sometimes sticks to the couche during final proofing.

Yeast-Water is the great way to naturally leaven a dough for those who dislike any acidity from sourdough or for those who bake very irregular.
I use apple yeast water which usually sits in the fridge for months. It’s (only) used for ciabatta.
I only feed if my stock is not enough. But I have a stable culture.
In order to reduce the sweetness a preferment with 20% of the flour is made. After it *3 you know it’s time to build the dough.
