Was ich daran am Meisten liebe? Die Honigbutter, die sich mit Orangenblütenwasser und Aprikosenfruchtsaft zu einem dicken Sirup verbindet. Göttlich! Übrigens, Aprikosensaison hin oder her: Das Rezept ist hervorragend dafür geeignet, um Aprikosen zu verarbeiten die zum Essen doch noch zu sauer sind.

Picked 17 pounds of apricots and 3 pounds of yellow peaches this past Friday at a farm in the Delta.
Apricots don't keep long so had to take care of them ASAP. Canned 12# resulting in 10 pint jars plus a tiny bit extra. Froze 3 1/2# of apricot halves (for eating or further canning) & kept 1 1/2# just for eating along w/the 3 pounds of peaches.
Still tons of fruit -- cherries, apricots, peaches & strawberries -- available for picking but the stone fruit won't last much longer and will probably be gone by the end of June/beginnign of July.

Tonight's #vegan dinner was a butternut squash, leek and apricot brown rice pilaff with home-roasted almonds and mandarin garnish. Flavoured with cinnamon, cardamom, bay and all spice.
Verdict: Very tasty, took forever for brown rice to cook, needed some additional protein (maybe Quorn pieces or hefty butter beans) as I'm still feckin' hungry after it. #foodporn #veganfood #dinner #dinneridea #pilaff #almonds #squah #apricots
