Made lamb stuffed #arepas for dinner tonight w leftover lamb #barbacoa from Sun. They were delicious! Was my first time making them.

There's something really satisfying in mushing your hands in masareapa dough.

Here's my go to recipe for quick green banana #arepas:

1.5 cups green banana flour
2 eggs
1/2 cup lard or butter
1.5 cups milk
1tsp baking soda
1 pinch of salt

Mix everything together. The texture should be soft but not runny.

Portion out into a preheated and well greased skillet, letting it cook evenly on both sides.

This can be eaten as a normal arepa - stuffed with cheese and butter - or like a pancake, served sweet with butter and syrup or maybe some yogurt and fruit.
