Here I take a closer look at the data models and compare performance. TL;DR: performance difference is partly due to data model, but mostly isn't (only about 2-3 times faster with the new model, usually).

My background is in software development and data architecture, so for me, designing a data model is an important step in understanding the problem. If the model is hard to create, I have a problem (which might be "the request is really hard to satisfy", more often it's "there is something I don't yet understand").
