Red-bean matcha hamantashen.
Claire Saffitz's recipe, plus 2 tsp of matcha powder in the dough (I would double it next time) and "scant Tbsp" each of store-bought red-bean paste.
I baked them for 30 minutes (not 22–27) and they were still not "golden brown all over" (I sense an analogy between baking matcha dough and flogging dark-skinned people). Let's hope they harden as they cool down—I really should measure my oven temperature.

Today's loaf: Walnut Levain
starter, whole wheat flour, white flour, water, salt, walnuts.
Perfect with butter and a little honey drizzle.
Whole-wheat sourdough with fennel & black sesame seeds. Lots and lots of fennel because @BamBam likes it.
Baking is powerful and effective.
