@anniebeeknits the project compares the impact of different fats (shortening v butter) and fat temperatures (room temp, cold, or melted) and flour (gluten percentage- all purpose or pastry) on texture and taste of pie shells. (With 4 testers to rank factors) The permutations and data collection is overwhelming. We have baked 2 shells so far. And she’s got special needs, so this is super extra fun and why I’m helping. But, we’re doing it.
