It’s a giant banana cake/chocolate cookie hybrid. Why am I baking today? Someone gave me a huge pile of frozen bananas and I figured this was a good way to use 3 of them- plus once I cut it into servings and freeze them.

The banana cake was 80% successful!

It was every bit as delicious and light as I’d anticipated. A lovely sponge, even with four bananas.

I’m only giving this 80% because I think another icing would have been better than buttercream - it didn’t need such a creamy, heavy icing. A light drizzle of caramel perhaps? Or just a small amount of cream cheese icing?

And the recommended amount of toasted coconut flakes in the recipe (15g)came nowhere near the amount shown in the photo illustrating the recipe - I think you’d need at least 45g for the luscious coverage they achieved.
