Hab da noch ein "Leevi" von 2018 der mittlerweile geschlossenen Brauerei Flügge zur Hand. Ein Barley Wine mit zarten 10,9% vol. und mit Brettanomyces vergoren. Ich bin gespannt.

Here's some Kehrwieder Nottingham Barleywine to the cooler temperatures and the small victories in life. Definitely on the American side of the spectrum with citrusy and resiny aromas combined with grapes and dried fruit. The taste combines some raisins and smokyness with a sticky hop bite that tastes of resin and citrus and nice sweet maltiness. A great experience. And at 10% ABV I definitely share this with the girlfriend... 😏

Transferred the #Barleywine to a secondary fermenter with the oak chips and took a sample of the gravity. 4°P means that we're at about 6,7% ABV already. The sample tastes boozy and grainy at this point which fits the reputation of young Barleywines being close to undrinkable. But a month of secondary fermentation and the rest of the year for bottle conditioning will hopefully mellow it out a bit. And no, tasting the sample is not cheating on dry January, it's quality control...

On that note, does anyone of my fellow homebrewers here have any recommendations about when to transfer the beer to a secondary fermenter? I'm usually not doing that but for the oak aging it's necessary. Most of the internet says "When the fermentation becomes less active" which is infuriatingly unspecific. Thanks. #Barleywine

For my #Barleywine, I borrow a trick from the whiskey makers and finish it with oak wood that was in contact with some other spirit. I obviously can't source 14 liter bourbon barrels but I can emulate that by soaking oak chips in brandy. I got the oak chips for a fistful of dollars last time I was in the US and I'm using some 15-yo Asbach, a solid and reasonably priced local brandy, again for some local terroir. Should be just enough to add complexity without overpowering the other flavors.

These Holiday season discovery was the #BarleyWine and #ImperialStout #beer. Both with an intense flavor that would be ideal to enjoy some blue cheese and rye bread while you sip them. Definitely, those will be in my list of favorite beer styles.

And for all those who are thinking "Aren't you afraid of bugs and mice drinking your beer with the fermenter open?": Oh yes, I am terrified! That's why I created this beauty, a fermenter lid with a piece of brew-in-a-bag mesh glued over the bunghole with food-grade silicone. Doesn't exactly live up to the reputation of German engineering but should do the trick. I'm the only one zwickeling this beer! #Barleywine #Homebrewing

I have seen open fermentations in smaller, more traditional breweries like Hook Norton, Adler-Bräu, Grohe Bier and (of course) Faust. I'd love to see more brewers experiment with this technique, it does give the beer a more satisfying character and is worth the slightly higher infection risk IMHO. #Barleywine #OpenFermentation
