I have only ever come across 1 recipe that asks for fresh bay leaves. I bet you've never seen many either. Strange that. They are the best.
And USE MORE THAN STATED in the recipe. A recipe will usually ask for 1 bay leaf. What use is 1 bay leaf? Can you taste the difference? No. Especially if it is aged, shop-bought bay. So use 3 or 4 or 5 in your recipes.
Someone once asked if anyone ever said "This dish doesn't have enough bay leaves in it". I put my hand up. As a vegetarian, flavour is important to me, and I try to maximise as much as possible using a range of herbs and spices. It is so easy to get that depth if you are non-vegetarian. It takes practice if you are #vegetarian.

The #bouquetgarni is bais for many dishes and we use it for the fond of the slow cooked beef. Regular you bind #thym, #parsley and #bayleaves to "bouquet" Of course we do this with local wild thym from Maroni. As we use oliveoil from @topervoli
