4. Preheat the BBQ on the middle gas setting, with the hood on 3/5. For cooking, reduce the gas to 1/5. The lower the flames, the more chance the food has to sear before dripping fat - you'll also have better control of cooking temperature, which means less chance of burning or food drying out.
5. Use a meat thermometer only at the end - it punctures the food, so you'll get some flames (not a bad thing)
@macmaniacs I know what you mean. Couple of thoughts on reducing flames for a gas #BBQ.
1. Use a vaporiser (aluminium plate) in between the grill and the burner
2. Fat burns, that's life. Reduce the fattiness of the food, or prep before grilling. Cut off fatty bits from chicken, pre-boil sausages before grilling. For burgers, sear on a griddle first if your BBQ has one before grilling.
3. Don't puncture burgers and sausages - that's when you get flames...
