If you ask me for a chocolate brand to check out that's got unexpected but awesome flavored bars, I'd say you have to try Fossa Chocolate. Fossa managed to make white chocolate and *seaweed* work.

The biggest challenge with the discussion of #cadmium in #chocolate has been that while some of the best advice I can give is "switch to bean to bar chocolate," it's way more expensive than Hershey, and often not all that kid friendly.

Today's #Chocolate: Enna Chocolate, "How'd you get those spots?" vanilla white with cacao nibs.

So I got into bean to bar chocolate not through dark chocolate, but through white. I mean, it had flavor beyond 'sweet'!

And this bar is fun! I do wish it had more nibs (my previous bar from them did), it ends up a touch sweet for me, but it's so smooth and vanilla-sweet with the savory-cocoa contrast from the nibs that I'm still going to finish the bar.

Chocolate of the day: Soma Chocolate Bejofo Madagascar 70%.

It opens up like deep, fudgy raspberry jam, then builds in cocoa-fudgy intensity, only to have this rather gently bitter/astringent finish. And it's super creamy and smooth thanks to the added cocoa butter! I'm tempted to pair it with a strong black tea to see if they can enhance each other, but it's so good on its own.

And yes, that bird is wearing sneakers.

Zotter Chocolate is an Austrian bean to bar chocolate brand known for their hand-scooped bars, which are basically giant truffle bars. And they're so fun! Like the red one is the poppy seed and cherry bar, which tastes like a slightly crunchy chocolate covered cherry.
